Our Mission

Taste has structure. We're mapping it.

Taste is deeply personal — and yet every platform built around it treats people as interchangeable. Scores reflect critics. Recommendations reflect the crowd. The assumption has always been that what sells most must suit most. It doesn't — and every person who's ever been let down by a highly-rated bottle knows it.

Palatec exists to fix that. We're building the data layer and model architecture to make taste-based intelligence real — beginning with wine, where the problem is hardest and the stakes of getting it right are highest.

Why Now

Three things converging at the right moment.

AI is ready

Large language models and embedding architectures can now reason over structured sensory data in ways that weren't possible even three years ago. Flavor vectors, sensory embeddings, and preference modeling are no longer theoretical — the infrastructure to build taste intelligence exists today.

Expert knowledge is accessible

A generation of credentialed sommeliers, educators, and sensory scientists are willing to contribute structured knowledge — if the platform is designed to capture it correctly. For the first time, expert palate data can be encoded at scale rather than locked inside individual tasting notes.

Consumers are ready

People are increasingly skeptical of aggregate scores and anonymous reviews — and they're already turning to AI and LLM models for wine guidance. The appetite for intelligent, personal recommendations is real. What's missing is a model trained on the right data to actually deliver them.

The Company

We're a small founding team building deliberately — focused on getting the foundation right before scaling. The model has to work before anything else matters. That means resisting shortcuts: no synthetic data, no crowdsourced ratings, no popularity proxies.

Our approach is grounded in expert knowledge from day one. The Founding Palate Council — a curated group of sommeliers, educators, winemakers, and wine writers — is central to how we build.
